Healthy Quick BreakfastAre you looking for a green, healthy quick breakfast that you can make in about three minutes?  Then here you go!

There’s nothing better than two over-easy eggs placed on top of a bed of avocado, with wilted spinach on top, lightly sprinkled with chia seeds, and salt and pepper.  If you want to add a few extra carbs, add whole-grain toast under the avocado.

Simply delicious, it only takes about 3 minutes to make.

Ingredients:  two eggs (cage free if possible), one-half avocado, handful or more of spinach, about a teaspoon of chia seeds, and a bit of salt and pepper.  (All ingredients organic if possible.)

Here’s the recipe:

Place a small pan on the stove on low heat and add a pat of butter.

When the butter no longer foams, break two eggs into pan.

While the eggs are cooking, use a butter knife to gently dice up one-half of an avocado while it’s still in its skin, and the scoop the pieces into a bowl.

When the transparent egg whites have turned solid white, loosen the edges and flip the eggs.  As soon as they’re flipped, turn off the heat and wait about 30 seconds.  Then slide into the bowl, right on top of the diced avocado pieces.

Next, take a handful of washed spinach and place it into the still warm pan just used to cook the eggs.  Stir a few seconds until the spinach wilts (you probably won’t even have to use heat), and then scoop on top of the eggs

Lightly sprinkled with chia seeds, and salt and pepper.

That’s it!  A quick and healthy breakfast that will energize your morning!
